Tomato, Basil and Mozzarella Omelette
2 beefsteak juice red tomatoes
approx 3oz fresh shredded mozzarella
1 handful of shredded basil leaves
2 teaspoons olive oil
2 large eggs
cracked black pepper (if desired)
1 pinch of salt
